About this unit
A potassium acetate solution discharged as a low-velocity soft spray through a long applicator lance. On burning oil it saponifies — chemically converting the surface of the fat into a soap crust that seals the vapour and holds the temperature down while the oil below cools past its auto-ignition point.
The soft spray matters as much as the chemistry: a jet would splash burning oil out of the vessel. Nothing else on this site should be used on a fryer, and a water or powder unit aimed into hot oil will produce a fireball.
